Forager’s Delight
From watercress and morel mushrooms to pea shoots and Swiss chard, spring produce continues to abound this week, both in the garden and foraged from the wild. Thus, this lineup sings with additional highlights like golden oregano, green spring garlic and mojito mint; combine these beauties with such provisions as freshly-made pappardelle pasta, rye bread, smoked salmon and duck eggs, and let the flavors of spring delight everyone at your table.

Here’s what you’ll find in your box this week:

Locally-Foraged Morel Mushrooms & Watercress

Peppery watercress and beautiful fungi that have been foraged from the mossy forests of the Pacific Northwest by expert mushroom hunter Jeremy Faber and his team at Foraged & Found Edibles.

Fresh Egg Pappardelle Pasta

This lovely, fresh handmade pasta is made by our favorite local pasta maker in Bellingham. Perhaps enjoyed tossed with smoked salmon and pea shoots, or with sautéed morel mushrooms, these broad, flat noodles should rightly earn their name, which is derived from the Italian verb for ‘to gobble up’.

Smoked Wild Salmon

Tender and perfectly flaky, this top-quality, reef net-caught salmon is hot smoked over alder coals and kissed with just the right amount of sea salt and brown sugar.

Rye Bread

This dense, flavorful loaf is baked just for us at our favorite small bakery in Snohomish and is made with medium-grain rye flour and light caraway seed.

Mille Prosecco Millesimato Extra-Dry DOC

Fabulously lively and light at every glass, this extra-dry Italian Prosecco features a bouquet of apple and pear notes as well as hints of light citrus.

Farm Fresh Eggs

Busy scratching through the straw mulch in their spacious outdoor run looking for tasty bugs and worms on nice days, our heritage breed laying hens are also thoroughly enjoying a bounty of sprouting seeds and spring popweed, in turn supplying us with fresh eggs in beautiful shades of blues, green and brown.

Duck Eggs

With near-transparent egg whites and color-rich oversize yolks, these pastured duck eggs are a chef’s dream, lending flavorful appeal to a variety of dishes.

Dried Cranberries & Honey-Orange Vinaigrette

A dynamic duo to add to your salads this week: Tart-sweet dried cranberries and our housemade honey-orange vinaigrette, which is kissed olive oil, farmstead honey and fresh orange juice.
