Spring Risotto Night
It’s the perfect match: Rich and comforting, yet bright and light, this week’s risotto-themed box is a beautiful blend of fresh flavors. Have fun experimenting in the kitchen with all the provisions for a risotto accented by our housemade chicken stock, easy-to-make preserved Meyer lemons and your choice of toppings, plus Pain au Levain bread, France’s signature Pommery mustard, farm-fresh eggs and spring favorites such as spinach, pea shoots, radishes, beets and fragrant herbs. Enjoy!

Here’s what you’ll find in your box:

Arborio Rice

When cooked with chicken stock and a splash of wine, this traditional round-grain rice becomes creamy and starchy and is a great accompaniment to just about any flavor combination—this week, we recommend serving this hearty, Italian-inspired entrée with preserved Meyer lemons (see recipe!) and your favorite sautéed spring vegetables.

Housemade Chicken Stock

Made from roasted Bella Luna chickens, our housemade stock is simmered with carrots, onions, parsley and celery and seasoned with just a dash of sea salt.

Pain au Levain Bread

This slightly-nutty, slightly-sweet sourdough loaf epitomizes French country-style baking with a chewy crust and light, airy interior. Baked by our favorite bakery in Snohomish, this traditional Pain au Levain is crafted using the bakery’s own sourdough starter.

Burgans Albariño 2018

An exotically perfumed bouquet evokes ripe melon, nectarine and mango, with hints of lemon pith and ginger, in this beautiful Spanish wine. Smooth and broad on the palate, offering juicy tropical and pit fruit flavors plus a suggestion of honeysuckle, it becomes more vibrant with air, picking up a mineral quality that carries through a long, seamless finish.

Farm Fresh Eggs

Spending their time dodging raindrops on wet spring days, or strutting around their enclosure on sunny ones, our heritage breed laying hens are now also enjoying the tasty green popweed we pull from the garden, in turn supplying us with eggs in beautiful shades of brown, beige and cream.

Moutarde de Meaux Pommery Mustard

Crafted from mustard seeds, water, vinegar, salt and spices, this immensely-flavorful wholegrain mustard from France has been made with the same time-honored recipe since 1632.

Seasonal Organic Greens

Enjoy a bounty of spring greens this week: Kale, spinach, pea shoots, colorful spring salad mix and Little Gem baby lettuce.

Seasonal Organic Fruits & Vegetables

This week’s produce selection also includes French breakfast radishes, rainbow chard, red beets, Huckleberry gold potatoes, baby leeks, and carrots, plus Meyer lemons, Cara Cara oranges, Pacific Rose and Granny Smith apples.

Fresh Garden Herbs

Italian parsley, thyme and shallots, plus both Oaxacan and Greek oregano, from the walled garden and greenhouse at Bella Luna Farms.
