What’s In The Box? November 5 – 11

Rainy Day Comforts
Stave off the rainy day blues this week with a lineup of warm-and-wonderful fall pairings—rich, flavorful roasted squash soup with freshly-grated Grana cheese, toasted Pain au Levain bread and herb compound butter, and baked fruit crisp fragrant with a cinnamon-pecan topping. Complemented by a French red wine and seasonal produce including Brussels sprouts, Shiitake mushrooms and the last of the season’s Anaheim peppers for frying, this cozy meal begs to be eaten fireside, tucked in your favorite chair, with the drip-drop-drip of rain falling outside.

Here’s what you’ll find in your box this week:

Roasted Squash Soup

To craft this incredibly comforting soup, a combination of beautiful Winter Density pumpkin, and Delicata and Kabocha squash are first roasted with top-quality olive oil, sea salt and fresh ground pepper, plus garden-fresh herbs, then blended with onions, garlic and our housemade chicken stock.

Pain au Levain Loaf

This slightly-nutty, slightly-sweet sourdough loaf embodies country-style French baking with a chewy crust and light, airy interior. Baked by our favorite bakery in Snohomish, this traditional Pain au Levain is crafted using the bakery’s own sourdough starter. Serve it this week alongside a bowl of soup with herb compound butter.

Fresh Herb Compound Butter

Crafted from sweet butter, shallots, fleur de sel and fresh garden herbs, this delicious, slightly-decadent compound butter is the perfect accompaniment to this week’s soup.

Domaine Dupré Beaujolais-Villages Récolte 2013

Crafted by the heralded winemaker Jean-Louise Dupré, this French wine boasts beautiful notes of blackberry and dark fruit. Grown on vines that are over 75 years old, the Gamay grapes in this varietal lead to its rich, concentrated flavor, making it a lovely dinner wine on a cold evening.

Grana-Style Cheese

Made in our farmstead creamery, this hard Grana-style cheese is crafted from part-skim cow’s milk to allow for longer aging of 24 months or more. Ideal for grating over soups and pasta, the drum-shaped cheese is turned and rubbed with olive oil during aging to create a smooth, golden rind.

Farm Fresh Eggs

Our small flock of heritage breed laying hens gives us fresh eggs in beautiful shades of brown, blue and green.

Fall Fruit Crisp Topping

Wonderful paired with fall pears or apples, our signature fruit crisp topping is crafted from organic brown sugar, sweet butter, fragrant cinnamon, dried cherries, and toasted pecans.

Ripe Orchard Fruit

Fresh Olympic Asian pears and red Empire apples.

Seasonal Organic Fruits & Vegetables

This week’s produce selection also includes Brussels sprouts, purple carrots, beefsteak tomatoes, Red Kuri Kabocha winter squash, Cipollini onions, Anaheim chilis, Corno di Toro sweet peppers, Romanesco broccoli, golden beets, Lacinato kale, and Shiitake mushrooms.

Seasonal Organic Greens

Organically-grown Italian flat-leaf parsley, sage, shallots and garlic.
