What’s In The Box? October 10-16

Fall Comforts
As leaves flutter to the ground and dusk descends earlier in the day, now is the time to cozy up with this week’s lineup of warm-and-wonderful fall offerings—rich, flavorful risotto accented with our signature chicken stock and Chanterelle mushroom duxelles, plus fresh pumpernickel bread, apple cake mix and a vibrant produce selection that includes golden beets, Basque peppers and Red Kuri squash. Also complemented by salad-ready blue cheese and apple cider-honey vinaigrette, this lovely autumn meal begs to be eaten fireside, tucked in your favorite chair, with a mug of hard pear cider in hand.

Here’s what you’ll find in your box this week:

Arborio Rice

This round-grain rice comes from the Po River Valley region of Italy and is named for the town of Arborio located in the heart of the area. When cooked with our flavorful chicken stock and a splash of white wine, it becomes creamy and starchy and is a great accompaniment to any flavor combination, especially seasonal Chanterelle mushrooms.

Chanterelle Mushroom Duxelles

This finely chopped mixture of golden Chanterelle mushrooms, shallots and herbs sautéed in butter and wine is excellent mixed into this week’s risotto.

Farm & Larder Chicken Stock

Made from roasted Bella Luna chickens, this flavorful stock is simmered slowly for hours with carrots, onions and celery and seasoned with a dash of sea salt.

Pumpernickel Bread

Baked fresh just for us by a small bakery in nearby Snohomish, this slightly-sweet rye bread loaf is wonderful served alongside this week’s earthy mushroom risotto and a crisp fall salad.

Winsome Ciderworks Asian Pear Hard Cider

Locally-crafted in Woodinville from Washington-grown fruit, this naturally-gluten-free hard cider features delicate Asian pear and citrus on the palate with an aromatic pear top note.

Westward Blue Cheese

This creamy soft cheese boasts a gorgeous marbled center and flavorful bite, making it a wonderful complement to salad greens.

Farm Fresh Eggs

Our small flock of heritage breed laying hens gives us fresh eggs in beautiful shades of brown and green. The “girls” are enjoying the crisp mornings and pleasant afternoons, chasing bugs and eating tasty green weeds we pull from the garden.

Dried Cranberries & Apple Cider-Honey Vinaigrette

A dynamic duo to add to your salads this week: Tart-sweet dried cranberries and our housemade vinaigrette, which is crafted with olive oil, farmstead honey and fresh apple cider.

Apple Cake Mix

Crafted from our own signature recipe, this apple cake mix bakes up moist and delicious when simply mixed with eggs, diced apples and walnuts—see recipes for details!

Seasonal Fruit

Cortland apples fresh from the orchard.

Seasonal Organic Greens

Treviso radicchio

Seasonal Organic Vegetables

This week’s produce selection includes golden beets, fennel, carrots, Red Kuri squash, spicy Basque peppers, mixed-color cauliflower, celery and sweet red Bullhorn peppers.

Fresh Garden Herbs

Parsley, rosemary, thyme and sage from the walled garden and greenhouse at Bella Luna.
