Though sunshine continues to reign during the day, a new season is beginning to take hold, with crisp, clear mornings, chilly evenings and a wealth of new produce options—from sweet Gala apples and hearty greens to golden Chanterelle mushrooms and Delicata squash. Thus, this week’s box embraces the warm, soulful flavors of fall, mixing seasonal ingredients with rustic semolina pasta, Gruyère cheese bread and a world-class Riesling from Germany.

Here’s what you’ll find in your box:

Lagana Foods’ Strozzapreti Pasta

Made in downtown Seattle, this tubular pasta is crafted using semolina flour and water, then cut to shape using traditional bronze molds. A collaboration between local chefs Kaela Farrington and Ethan Stowell, Lagana Foods’ pasta is the epitome of rustic elegance—especially topped with sautéed Chanterelle mushrooms from this week’s box.

Chanterelle Mushrooms

With a firm texture and light, delicate flavor, local Chanterelle mushrooms shine in a variety of dishes, lending earthy appeal to soups, stews and of course, pasta. Try these golden gems sautéed in butter and Bella Luna Farms chicken stock, then topped with chopped fresh herbs.

Gruyère Cheese Bread

Crafted in nearby Snohomish by one of our favorite bakeries, this freshly-baked loaf balances sweet, nutty Gruyère with a light, crisp crust. Absolutely wonderful re-warmed in the oven—just sprinkle with a few drops of water and bake at 350° for about 15 minutes.

Dr. Loosen ‘Red Slate’ Riesling

Produced with fruit from estate-owned vineyards in the highly revered villages of Erden and Ürzig in Germany, this classically dry Riesling is made by Dr. Ernst Loosen, one of most well-known Riesling makers in the world, and arguably one of the most well-known winemakers ever. Farmed specifically for producing a dry wine in the red slate soils of the region, the wine is fermented with native yeasts in 3,000-liter, neutral oak casks. The casks help to soften the acidity, and allow a tiny amount of oxygenation that adds texture and greater complexity. Red Slate Riesling is intense with a minerality that is crisp and enveloping, with spicy, citrus blossom aromas and harmonious texture on the palate.

Farm Fresh Eggs

Our small flock of heritage breed laying hens gives us fresh eggs in beautiful shades of brown, blue and green. With shorter days that signal the coming of fall, the girls are up with the sun to roam the outdoors where they can still enjoy the warm afternoons scratching up bugs and eating tasty greens and weeds we pull from the garden. Bedtime is coming much earlier now, as we see them heading into their house to roost as the sun is going down.

Jersey Tomme Cheese

Made in our in-house creamery, this Alpine-style cheese is crafted with raw whole milk and extra cream from pasture-fed Jersey cows from the Dungeness Valley, then aged in our cave for five months, lending to a rich taste and creamy mouthfeel. Grate over this week’s pasta for a luscious finishing touch.

Housemade Chicken Stock

Made from roasted Bella Luna chickens, this flavorful stock is simmered slowly for hours with carrots, onions and celery and seasoned with a dash of sea salt.

Seasonal Organic Fruits & Vegetables

This week’s produce selection includes purple carrots, French fingerling potatoes, Sungold cherry tomatoes, Cipollini onions, chioggia beets and Delicata squash, plus sweet Gala apples.

Seasonal Organic Greens

Butter lettuce, Rosso di Luisa radicchio, Deer Tongue lettuce and Salanova red baby lettuce.

Fresh Garden Herbs

Fresh sage, rosemary, Italian parsley, savory, garlic and shallots from the Walled Garden at Bella Luna Farms.
