Summer into Fall
Though sunshine continues to reign during the day, a new season is beginning to take hold, with crisp, clear mornings, chilly evenings and a wealth of new produce options—from lovely ripe pears and bright carrots to golden Chanterelle mushrooms. Thus, this week’s box embraces the crisp, soulful flavors of fall as they converge with late summer favorites like corn and tomatoes, mixing these seasonal ingredients with rustic semolina pasta, Gruyère cheese bread and a light, fresh Austrian white wine.

Here’s what you’ll find in your box this week:

Lagana Foods Campanelle Pasta

Created by local chefs Ethan Stowell and Kaela Farrington, Lagana Foods pasta is hand-crafted using semolina flour and water, then cut to shape with Old-World bronze dies to give the dough an intentionally rustic appeal. This week, celebrate the start of fall by tossing this lovely bell-shaped pasta with sautéed Chanterelle mushrooms and roasted cauliflower florets.

Chanterelle Mushrooms

With a firm texture and light, delicate flavor, these locally-foraged Chanterelle mushrooms shine in a variety of dishes, lending earthy appeal to soups, stews and of course, pasta. Try these golden gems in this week’s pasta, simply sautéed in butter and Bella Luna Farms chicken stock, then topped with fresh herbs.

Gruyère Cheese Bread

Crafted in nearby Snohomish by one of our favorite bakeries, this freshly-baked loaf balances sweet, nutty Gruyère with a light, crisp crust. It is absolutely wonderful re-warmed in the oven—just sprinkle with a few drops of water and bake at 350° for about 15 minutes.

Housemade Chicken Stock

Made from roasted Bella Luna chickens, this flavorful stock is simmered slowly for hours with carrots, white wine, herbs, onions and celery and seasoned with a dash of sea salt.

Tarallini al Pecorino Crackers

Crisp and crunchy, these imported snacking crackers are rich with the nutty flavor of aged Pecorino Romano cheese—a wonderful accompaniment to a crisp glass of wine!

Glatzer Grüner Veltliner

Fresh and light on the palate with a bold fragrance, this Austrian Grüner is crafted from grapes grown in the legendary Carnuntum region, which has been home to viticultural endeavors stretching back to the Roman Empire.

Farm Fresh Eggs

Our small flock of heritage breed laying hens gives us fresh eggs in beautiful shades of brown, blue and green. With shorter days that signal the coming of fall, the girls are up with the sun to roam the outdoors where they still enjoy the warm afternoons. Bedtime is coming much earlier now, as we see them heading into their house to roost as the sun is going down.

Housemade Crème Fraîche

Crafted in our farmstead creamery from pasteurized organic sweet cream, this rich and silky crème fraîche is delicious dolloped on sweet poached pears—see recipes for details.

Ripe Asian Hosui Pears

The first of the fall pears, mellow and sweet.

Seasonal Organic Fruits & Vegetables

This week’s produce selection also includes heirloom sweet Topepo Rosso peppers, sweet Skagit onions, Utah celery, French Chantenay carrots, bicolor sweet corn and mixed heirloom tomatoes including Brandywine, Pruden’s Purple and Zebra varieties, plus cauliflower, sprouting broccoli, fennel and Marketmore cucumbers.

Seasonal Organic Greens

A beautiful selection of Bianca di Chioggia radicchio and Little Gem lettuce.

Fresh Garden Herbs

Organically-grown flat-leaf Italian parsley, sage, thyme, garlic and shallots.
