Heirloom Tomato Salad with Basil-Pesto Vinaigrette and Fresh Mozzarella

A beautiful twist on the classic Caprese salad!

Ingredients:
2 pounds heirloom tomatoes, cored and cut into thick rounds
8 ounces fresh mozzarella cheese, cut into thick rounds
Toasted pine nuts and freshly-chopped basil leaves (optional)

For basil-pesto vinaigrette:
2 small garlic cloves, chopped
2 tablespoons toasted pine nuts
2 cups lightly packed basil
¼ cup shredded Grana-style cheese
3 tablespoons white balsamic or white wine vinegar
â…“ cup extra virgin olive oil
Sea salt and fresh ground pepper


Method:

1. Combine vinaigrette ingredients in a food processor; process until smooth. Season to taste with sea salt and fresh ground pepper.

2. On a serving platter, arrange the tomato slices and mozzarella cheese rounds in an alternating pattern. Drizzle with the pesto vinaigrette and season with additional salt and pepper as desired. Garnish with additional toasted pine nuts and additional chopped basil as desired.

Classic Basil Pesto

Toss it on pasta, add it to salad dressings, drizzle over heirloom tomatoes—the possibilities are endless with this classic sauce!

Ingredients:
4 cups fresh basil leaves (from about 3 large bunches)
½ cup extra-virgin olive oil
â…“ cup pine nuts
2 garlic cloves
½ cup freshly grated Grana-style cheese
1 teaspoon coarse kosher salt

Method:
1. Combine basil, pine nuts, cheese and garlic in a blender or food processor. Blend until paste forms, stopping often to push down any basil caught on the sides of the bowl. Then, with the motor running, add the olive oil in a steady stream and blend until smooth. Season to taste with salt, and then transfer to a small bowl.

Ricotta-Stuffed Paccheri with Marinara & Basil-Nettle Pesto

This wonderful baked pasta boasts beautiful color courtesy of a swirl of pesto.

Ingredients:
1 pound paccheri noodles
2 cups Farm & Larder ricotta cheese
2 eggs
Farm & Larder Nonna Pat’s marinara sauce
Farm & Larder basil-nettle pesto
Sea salt and fresh ground pepper
½ cup Grana-style cheese, such as Parmesan

Method:
1. Over medium-high heat, bring a large pot of generously-salted water to a boil. Drop in paccheri noodles and cook until just al dente, with plenty of bite left, about 5 minutes. Drain, then rinse with cold water to cool and drain again. Drizzle with a swirl of olive oil and set aside.

2. In a mixing bowl, combine ricotta cheese and eggs, stirring thoroughly to mix and break up eggs. Season generously with salt and pepper.

3. In large glass or ceramic baking dish, spoon in 1-2 tablespoons marinara to coat bottom. With a wooden spoon or spatula, stuff about 4 tablespoons ricotta mixture into each paccheri, working one at a time, laying out stuffed noodles in the baking dish. When finished, top with Nonna Pat’s marinara and lightly spread to cover with noodles. Drizzle with basil-nettle pesto, and sprinkle with Parmesan cheese.

4. Bake in a preheated oven at 350° for 20-25 minutes, or until cheese has melted and sauce is bubbly.

Campanelle Pasta with Basil-Nettle Pesto

Tossed with sautéed leeks and fragrant garlic, this pasta is bright and fresh for spring.

Ingredients:
1 pound Lagana Foods campanelle pasta
F&L basil-nettle pesto
1 leek, trimmed of tough ends, with white and light green parts chopped
3 cloves garlic, minced
2 tablespoons olive oil
1 tablespoon butter
½ cup Grana-style cheese, for serving
Sea salt and fresh ground pepper

Method:
1. Bring a large pot of well-salted water to a boil, then add the pasta. Cook until campanelle is al dente, about 7-8 minutes. Reserve ½ cup pasta water, then drain pasta.

2. Meanwhile, heat olive oil in a skillet over medium heat. Once warm, add the leeks and garlic, tossing to coat with oil. Season with salt and pepper, then cover and sweat until leeks are tender and garlic is fragrant, about 4-5 minutes.

3. Add drained pasta to the skillet with the leeks and garlic, then toss with butter and basil-nettle pesto. If pasta seems a little dry, mix in reserved pasta water. Check for seasoning and add more salt and pepper if needed. Serve with Grana-style cheese to sprinkle over pasta.

Grilled Baby Artichokes with Lemon & Walnut Pesto

These petite grilled artichokes are a wonderful appetizer.

Ingredients:
6-8 baby artichokes
2 lemons, halved
¼ cup lemon juice
½ cup F&L walnut pesto
¼ cup olive oil
Sea salt and fresh ground pepper

Method:
1. To prep the artichokes, squeeze the juice from the halved lemons into a large bowl of cold water. Snap off the outer dark green leaves of the artichokes so that the pale greenish-yellow inner leaves are visible, then trim off the top half-inch of each artichoke and cut each in half. Using a small knife, cut out the choke and remove any prickly-tipped leaves from the center of the artichoke half. Drop each trimmed wedge into the lemon water as you go.

2. Bring a large pot of salted water to a boil. Drain the artichokes and add to the boiling water. Boil until crisp-tender, about 5 minutes. Drain and transfer the artichokes to a rack to cool.

3. Preheat the grill to medium-high heat. In a small bowl, whisk together the lemon juice, walnut pesto, olive oil, salt and pepper. Brush the artichokes with about half of the dressing, then grill until they are tender and lightly-charred in spots, about 5 minutes. Transfer artichokes to a platter and drizzle with remaining dressing. Serve warm or at room temperature.

Grilled Bread with Basil Pesto

A wonderful appetizer to serve with this week’s pasta supper!

Ingredients:
2 cups basil leaves
½ cup toasted pine nuts
2 garlic cloves, peeled and minced
½ cup grated Grana-style cheese
½ cup olive oil, plus more for brushing
Pain au Levain bread, sliced into ¼-inch-thick pieces
Sea salt

Method:
1. In a food processor, combine the basil, pine nuts, garlic, cheese and salt. Process until the ingredients are roughly chopped. With the processor running, gradually drizzle in the olive oil until you have a chunky pesto. Set aside.

2. Heat the grill. Lightly brush each slice of bread with olive oil on both sides. Grill the slices a minute or two per side until they are crusty and have charred grill marks but are still soft in the middle. Spread each slice with a generous helping of pesto.

Zucchini Ribbons with Lemon & Basil

This incredibly fresh side from Alice Waters’ Art of Simple Food II is seasoned with just the right amount of fragrant basil and zesty lemon.

Ingredients:
2-3 small zucchini, ends removed
¼ bunch basil
Extra virgin olive oil
Juice of 1 lemon
Sea salt and fresh ground pepper

Method:
1. Slice the zucchini into thin strips, about 1/8 inch thick. (A mandolin makes this easier, but you can also use a vegetable peeler.)

2. Stack the basil leaves, and cut them thinly crosswise.

3. Layer the squash slices into a shallow dish. Sprinkle each layer with salt, pepper, basil, lemon juice and olive oil. Let sit for at least 10 minutes and serve.

Variations: Try grating the zucchini instead, or use other herbs, like mint, cilantro, or chervil with the basil.

Fried Corona Beans with Kale-Lemon Pesto

Pan-fried and then tossed with a bright kale-lemon pesto, these crispy beans are incredibly satisfying.

Ingredients:
4 cups cooked Corona beans (see method)
1 bunch Tuscan black kale
¾ cup Grana-style cheese
¾ cup toasted pecans
Zest and juice of 1-2 lemons
¼ teaspoon nutmeg
1-2 tablespoons olive oil, plus additional for frying
1 clove garlic, minced
Pinch salt

Method:
1. To prep the pesto: Roughly remove stems from kale. Add kale to a pot of boiling water. Stir and cook about 45 seconds, then remove and rinse with cold water. Pick up kale with your hands and mold into a ball, squeezing out all the excess water. Set aside. In a food processor, add the lemon zest, juice, salt, nutmeg, garlic and pecans. Pulse a few times to coarsely chop. Add in the kale, and pulse while adding olive oil. Taste for salt and add more oil if it is too dry.

2. Add 1-2 tablespoons additional olive oil to coat a large frying pan. Heat the olive oil over medium-high heat until shimmering, then add beans in a single layer. Stir to coat the beans, then let them sit long enough to brown on one side, about 3-4 minutes, before turning to brown the other side, also about 3-4 minutes. The beans should be golden and a bit crunchy on the outside.

3. Add kale-lemon pesto to the beans and toss to combine. Remove from heat and serve lightly sprinkled with additional Grana cheese.

Arugula Pesto

Stash this bright, zippy pesto in your freezer to add to the likes of pastas, soups or even grilled vegetables.

Ingredients:
4 cups arugula
1-2 cloves garlic
2 tablespoons toasted pine nuts
1 cup olive oil
½ cup Parmesan cheese, grated
Sea salt and fresh ground pepper

Method:
1. In a food processor, combine the pine nuts, garlic, arugula, Parmesan, and about 1 teaspoon salt and pulse to blend. With the machine running, pour in the olive oil through the food tube in a slow, steady stream and process until smooth, stopping to scrape down the sides of the bowl as needed. Taste and season with additional salt and pepper as needed.

Summer Squash Ribbons with Lemon & Mint

This adaptation from a beloved Alice Waters recipe is seasoned with just the right amount of fragrant basil and zesty lemon.

¼ bunch basil
2 tablespoons fresh mint, chopped
Extra virgin olive oil
Juice of 1 lemon
Sea salt and fresh ground pepper

Method:
1. Slice the summer squash into thin strips, about 1/8 inch thick. (A mandolin makes this easier, but you can also use a vegetable peeler.)
