Crispy Parsnip Chips

These lightly-salted baked chips are a wonderful afternoon snack!

Ingredients:
½ pound parsnips, peeled
2 tablespoons olive oil
Sea salt

Method:
1. Preheat oven to 300°.

2. Using a vegetable peeler, peel parsnips into long, very thin strips. Place strips in a bowl and toss with olive oil and salt. Lay parsnip strips on baking sheets lined with parchment paper.

3. Bake for 20 to 25 minutes, or until parsnip strips are crispy and golden brown. Allow strips to cool on baking sheets before removing.

Spicy Honey-Glazed Parsnips

Drizzled with chili-honey butter, this roasted parsnip recipe from Bon Appetit is a real winner.

Ingredients:
1 pound parsnips, peeled and cut into 3-inch-long matchsticks
¼ cup olive oil
½ teaspoon red pepper flakes
2 tablespoons unsalted butter
1 tablespoon apple cider vinegar
1 tablespoon honey
Sea salt and fresh ground pepper

Method:

  1. Preheat oven to 450°. Toss parsnips and oil on a rimmed baking sheet; season with salt and pepper. Roast parsnips, tossing occasionally, until tender and deep golden brown in spots, 35-40 minutes.
  2. Meanwhile, heat red pepper flakes, butter, vinegar, and honey in a small saucepan over medium heat, stirring occasionally, until butter is melted.
  3. Drizzle chili-honey butter over parsnips and toss to coat.

In this side dish from Martha Stewart, the inherent earthiness of the parsnips is further enhanced by fragrant rosemary.

Ingredients:
1½ pounds parsnips
2 tablespoons olive oil
2 teaspoons chopped fresh rosemary
Sea salt and fresh ground pepper

Method:
1. Preheat oven to 450°. Peel and cut parsnips into 1/2-by-2-inch pieces.

2. On a rimmed baking sheet, toss parsnips with olive oil and rosemary, then season with salt and pepper.

3. Roast until tender and golden, about 20 minutes, stirring halfway through.

Roasted Carrots & Parsnips with Shallots

This recipe works well with any number of root vegetables—use whatever you have in your crisper!

Ingredients:
3 cups carrots, scrubbed and sliced into 1-inch pieces
3 cups parsnips, scrubbed and sliced into 1-inch pieces
2 shallots, peeled and cut into wedges
2 tablespoons olive oil
Freshly-chopped herbs of your choice, such as parsley and thyme
Sea salt and fresh ground pepper to taste

Method:
1. Heat the oven to 400°. Line a rimmed baking sheet with parchment.

2. Using your fingers, toss the carrots, parsnips and shallots with the oil and a large pinch of sea salt in a bowl and then transfer to the baking sheet.

3. Put the vegetables in the oven and roast for 20 minutes. Flip them gently with a spatula and continue to roast until the vegetables are browned and crispy, another 10 to 20 minutes. Season with additional salt and pepper if desired. Garnish with freshly-chopped herbs. Serve hot, warm or at room temperature.

Roasted Potatoes & Parsnips with Herbs

Fragrant herbs add a bright touch to these roasted vegetables.

Ingredients:
1 pound Huckleberry Gold potatoes
1½ pounds parsnips
1 yellow onion
2 tablespoons chopped fresh herbs, such as parsley and thyme
2 tablespoons olive oil
Sea salt and fresh ground pepper, to taste

Method:
1. Preheat oven to 425°.

2. Combine all the fingerling potatoes, onions and parsnips in a large bowl, tossing with the olive oil to coat. Season generously with salt and pepper. Arrange potato mixture on a foil-lined jelly-roll pan coated with cooking spray. Bake for 25-35 minutes or until potatoes and parsnips are tender and browned in spots, turning after 15 minutes. Remove from the oven.

3. Garnish with the fresh-chopped herbs before serving.

Kale Chips

These crispy chips are wonderful for snacking!

Ingredients:
1 bunch Lacinato kale
1 tablespoon olive oil
½ teaspoon cumin
¼ teaspoon paprika
1 teaspoon sea salt

Method:
1. Preheat oven to 350°. Wash the kale then gently pat it dry. Remove the tough stem from each leaf, then tear the leaves into large pieces.

2. In a large bowl drizzle the olive oil onto the kale, using your hands to massage the oil into the leaves. Sprinkle the cumin and paprika onto the kale (you may need to use your hands to evenly distribute the spices).

3. Lay out the leaves on a baking sheet covered in parchment or a silpat. Dust with sea salt, then bake for about 16 minutes, turning halfway through. Bake until just crisp, leaves should be just curled at the edges.

Mashed Turnips & Parsnips

This side dish is rich and comforting, thanks to the combination of turnips, parsnips and fresh herbs.

Ingredients:
3-4 turnips, peeled and cubed
3-4 parsnips, peeled and cubed
3 tablespoons butter
4 garlic cloves, minced
2 tablespoons fresh herbs of your choice, such as parsley, oregano and thyme, chopped
1 cup milk
Sea salt and fresh ground pepper

Method:
1. Add the turnips and parsnips to a large pot of cold salted water. Bring to a boil, then reduce to a simmer and cook until soft and tender, about 20 minutes.

2. In a small saucepan, add the butter over medium-high heat. Once melted and foamy, add the garlic and herbs and sauté until the garlic is fragrant and the butter begins to brown. Season with salt and pepper. Add the milk and bring to a simmer.

3. Drain the turnips and parsnips in a colander in the sink. Add the turnips and potatoes back to the pot they were cooked in. Add the hot milk mixture and roughly mash the vegetables. If you prefer a smoother texture, use an immersion blender and purée until smooth and silky. Taste for seasoning, and add salt and pepper if needed.

Root Ribbons with Sage

This stunning salad from local chef Jerry Traunfeld adds just a touch of sweetness to winter vegetables.

Ingredients:
2 pounds root vegetables, such as parsnips
3 tablespoons butter
¼ cup coarsely-chopped sage
1 tablespoon maple syrup
2 teaspoons fresh lemon juice
Sea salt and fresh ground pepper

Method:
1. Wash and peel the parsnips and discard the peelings. Continue to peel the parsnips from their tops to the root tips to produce ribbons, rotating the roots on their axis a quarter turn after each strip is peeled, until left with cores that are too small to work with.

2. Melt the butter with the sage in a large skillet over medium heat. Stir for a minute to partially cook the sage. Add the root ribbons and toss them with tongs until they begin to wilt. Add the salt, a good grinding of black pepper, the maple syrup, lemon juice and about ½ cup of water.

3. Continue to cook the vegetables over medium heat, turning them with tongs every minute or so, until all the liquid boils away and the ribbons are glazed and tender, about 10 minutes total. Serve right away, or cool and reheat in the skillet when ready to serve.

1. Heat the oven to 400°. Line a rimmed baking sheet with parchment.
