Hazelnut Hotcakes

Crafted with toasted hazelnut flour and hearty whole-grains, our signature mix produces one satisfying flapjack!

Ingredients:
2 cups Farm & Larder hotcake mix
2 cups milk
2 eggs

Method:
1. Mix together mix, milk and eggs in a large bowl.

2. Heat skillet over medium-high, adding a dab of butter to grease the pan. Spoon a scant ¼ cup hotcake mixture into the pan. Cook 3-4 minutes, then flip and continue cooking until browned on both sides. Set aside and repeat process; mix should yield 12-14 hotcakes.

3. Top with honey-cinnamon butter and barrel-aged maple syrup. Enjoy!

Apple-Pear Galette with Hazelnut Crumb Topping

This rustic fruit tart is fragrant with cinnamon, sugar and toasted hazelnuts.

Ingredients:
Farm & Larder galette dough, chilled
2 Gala apples
1 red d’Anjou pear
2 tablespoons sugar
½ teaspoon cinnamon
Hazelnut crumb topping (see below)

Topping:
1 cup toasted hazelnuts, thoroughly cooled
â…” cup sugar
¾ cup all-purpose flour
¼ teaspoon salt
â…› teaspoon cinnamon
½ cup (1 stick) cold unsalted butter, cut into ¼-inch pieces

Method:
1. To prepare the topping: Place the toasted hazelnuts and sugar in a food processor and pulse until the nuts are well chopped. Add the flour, salt, and cinnamon and pulse again to mix. Remove the lid and scatter the butter over the dry ingredients. Pulse until the mixture resembles medium-fine crumbs. Refrigerate until ready to use.

2. Preheat the oven to 400°. Peel, halve and core the apples and slice into ¼-inch thick pieces. In a bowl, toss the fruit slices with the sugar and cinnamon.

3. On a lightly floured work surface, roll the pastry into a 12-by-14-inch rectangle and transfer to a large rimmed baking sheet. Decoratively arrange the fruit slices over the pastry to within an inch of the edge. Top the fruit with the hazelnut crumb topping and spread out in an even layer (you may have leftover topping). Fold the pastry edge up and over the fruit to create a 1-inch border.

4. Bake the galette for about 1 hour, until the pastry is nicely browned and crisp and the fruit is tender. Transfer the pan to a rack and let the galette cool. Serve warm or at room temperature.

Warm Beet Salad with Blue Cheese & Hazelnuts

Topped with blue cheese and toasted hazelnuts, this flavorful salad is incredibly beautiful.

Ingredients:
Roasted beets, sliced and still warm from the oven (see recipe)
1 head each Little Gem, baby Romaine and Butter lettuce, rinsed, patted dry with a paper towel and coarsely chopped
1 cup raw hazelnuts
½ cup crumbled blue cheese
½ cup high-quality olive oil
2 tablespoons balsamic vinegar
1 clove garlic, crushed
Fresh ground pepper

Method:
1. To toast hazelnuts: Preheat oven to 350°. In a baking pan toast hazelnuts in one layer in middle of oven 10-15 minutes, or until lightly colored and skins are blistered. Wrap nuts in a kitchen towel and let steam 1 minute. Rub nuts in towel to remove loose skins (don’t worry about skins that don’t come off) and cool completely. Coarsely chop.

2. To prepare vinaigrette: Whisk olive oil, balsamic vinegar and garlic together, seasoning with fresh ground pepper to taste.

3. To assemble the salad: Arrange lettuce on a large platter and then top with beet slices. Top with crumbled blue cheese and chopped hazelnuts, then drizzle with the vinaigrette.

Warm Beet Salad with Winter Greens

Topped with fresh Chevre and our crunchy hazelnuts, this flavorful salad is a true winter pick-me-up.

Ingredients:
Roasted golden beets, sliced and still warm from the oven (see recipe)
1 head escarole, washed, dried and coarsely chopped
1 head frisée, washed, dried and coarsely chopped
Farm & Larder hazelnut-thyme vinaigrette
½ cup crumbled fresh Chevre
½ cup Farm & Larder toasted hazelnut topping
Fresh-cracked pepper

Method:
1. In a small bowl, add frisée and escarole and drizzle with about ½ cup Farm & Larder hazelnut-thyme vinaigrette, and toss to combine. Allow to stand at room temperature for about 1-2 minutes, allowing greens to soak up some of the vinaigrette.

2. Arrange greens on serving platter, then top with warm beet slices. Generously sprinkle with fresh Chevre and hazelnut topping, then drizzle with the remaining hazelnut-thyme dressing. Season with fresh-cracked black pepper to taste.

Variation: These beets are also wonderful served over thinly-sliced fennel in lieu of the greens. Just let fennel soak up vinaigrette for about 10 minutes to soften slightly.

Frisée Salad with Apricots & Hazelnuts

This salad is amazing with pretty much any stone fruit, from plums to peaches.

Ingredients:
1 medium head radicchio, torn into bite-size pieces
1 medium head frisée, torn into bite-size pieces
2 apricots, pitted and cut into thin slices
¼ cup hazelnut oil
2 tablespoons red wine vinegar
4 ounces goat cheese, crumbled
½ cup roasted hazelnuts, coarsely chopped
Sea salt and fresh ground pepper

Method:
1. In a large bowl, whisk the hazelnut oil with the red wine vinegar and season with salt and pepper.

2. Add the radicchio and frisée and toss until coated. Add the apricots slices, goat cheese and hazelnuts, season the salad with salt and pepper, toss gently and serve.

Pea Shoot & Microgreen Salad with Hazelnuts

This stellar salad from Food & Wine is beautifully balanced with peppery microgreens and sweet pea shoots.

Ingredients:
½ cup hazelnuts
1½ tablespoons Champagne vinegar or white wine vinegar
¼ teaspoon Dijon mustard
¼ teaspoon honey
¼ teaspoon minced shallot
¼ cup extra-virgin olive oil
1 pound combined micro greens, such as this week’s broccoli, and pea shoots
2 large radishes, trimmed and very thinly sliced on a mandoline
1 fennel bulb, halved lengthwise, cored and very thinly sliced on a mandoline
Sea salt and fresh ground pepper

Method:
1. Preheat the oven to 375°. Spread the hazelnuts in a pie plate and toast until they are fragrant and the skins blister, about 14 minutes. Transfer the toasted hazelnuts to a kitchen towel and let cool slightly, then vigorously rub the nuts together to remove the skins. Coarsely chop the nuts.

2. In a large bowl, whisk the Champagne vinegar with the Dijon mustard, honey and minced shallot. Add the extra-virgin olive oil and whisk until blended. Season the vinaigrette with salt and freshly ground black pepper. Add the microgreens, pea shoots, radishes, fennel and chopped hazelnuts and toss well. Season with salt and pepper and serve right away.

Sunflower Shoot & Arugula Salad with Radishes & Hazelnuts

This stellar salad from Food & Wine is beautifully balanced with peppery greens and radishes and sweet pea shoots.

Ingredients:
½ cup hazelnuts
1½ tablespoons Champagne vinegar or white wine vinegar
¼ teaspoon Dijon mustard

2 cups sunflower shoots
2-3 Pink Beauty radishes, trimmed and very thinly sliced on a mandoline

Romaine Salad with Blue Cheese & Hazelnuts

Drizzled with our creamy housemade dressing, this crisp salad is topped with fresh blue cheese and earthy, toasted Northwest hazelnuts for a flavorful finish.

Ingredients:
1 head baby romaine lettuce
½ cup chopped hazelnuts
½ cup crumbled Westward Blue cheese (included in box)
Westward Blue cheese dressing (included in box)

Method:
1. Wash lettuce and pat dry with paper towels. Trim root section and cut head in half lengthwise.

2. Pile greens on a serving platter and top with chopped hazelnuts and crumbled blue cheese, then drizzle with dressing. Season with fresh ground pepper to taste.

1 cup water

Method:
1. Mix together mix and water in a large bowl.

3. Top with maple syrup and sautéed apples and enjoy!

Crostini with Blue Cheese, Honey & Hazelnuts

Fit for pairing with this week’s soup, these decadent crostini are lovely topped with fresh slices of ripe pear or apple.

Ingredients:
12, ¼-inch thick slices of bread, either from a rustic baguette or this week’s whole grain bread
4 ounces blue cheese at room temperature
½ cup toasted hazelnuts, roughly chopped
Honey
Thinly-sliced, or diced, pear or apple

Method:
1. Preheat oven to 400°. Place bread slices in single layer on baking sheet. Toast in oven until barely golden, about 8 minutes. (Can be made 4 hours ahead.)

2. Spread blue cheese on the bread slices and sprinkle hazelnuts over each. Top with fruit slices and return to oven until cheese begins to melt and bread is golden brown, about 5-7 minutes.

3. Drizzle each slice lightly with honey and serve.
