Oven-Dried Cranberry and Orange-Peel Salt

This unique flavored salt is wonderful seasoning for pork or poultry (and makes a great holiday gift, too!).

Ingredients:
1 cup fresh cranberries
2 Mandarin oranges
1 cup kosher salt

Method:
1. Preheat oven to 200°. Line a baking sheet with parchment paper and set aside. Rinse the fruit and pat dry. Using a vegetable peeler, remove the orange peels in thin slices.

2. Arrange the cranberries and the orange peel on the baking sheet and bake for about 8 hours, or until the fruit is completely dry, but not burned. Remove the baking sheet from the oven and allow to cool.

3. Add the dried cranberry and orange peel to a food processor and pulse until the mixture until fine. Pour the mixture into a medium-sized bowl. Add the salt. Gently mix and pour the salt blend into an airtight jar. When kept sealed, the mixture will last for about 2 weeks.

Cara Cara Orange Salad with Arugula, Pea Shoots & Fennel

This crisp, citrus-kissed salad is both bold in flavor and beautiful in presentation.

Ingredients:
1 Cara Cara orange
½ pound arugula greens
½ pound pea shoots
2 petite fennel bulbs, quartered, cored and thinly sliced, plus a handful of the fronds

Vinaigrette:
1 1-inch piece of fresh ginger, peeled and minced
â…“ cup freshly squeezed juice from a Cara Cara orange
¼ cup white wine vinegar
1 teaspoon honey
¾ cup olive oil
Sea salt salt and fresh ground pepper

Method:
1. Spread the arugula greens out on a large, round serving platter to make a bed.

2. Using a sharp paring knife, cut the tops and bottoms off the orange. Stand oranges up and slice to remove the peel and membrane. Then, slice oranges crosswise into thin wheels.

3. Arrange the orange on top of the arugula, overlapping the slices slightly. Then layer on the fennel slices. Scatter the pea shoots on top of the salad.

4. Whisk together the vinaigrette ingredients and drizzle over the salad and then season with ground pepper if desired.

Radicchio Salad with Fennel & Blood Oranges

This crisp, citrus-kissed salad is just beautiful.

Ingredients:
4 cups mixed radicchio, trimmed and sliced
2 blood oranges
½ red onion, thinly sliced
1 small fennel bulb, quartered, cored and thinly sliced
Sea salt and fresh ground pepper

Vinaigrette:
1 shallot, peeled and minced
â…“ cup freshly squeezed juice from a blood orange
â…“ cup red wine vinegar
1 teaspoon honey
¾ cup olive oil
Sea salt salt and fresh ground pepper

Method:
1. Add radicchio greens to a large mixing bowl. In a separate small bowl, whisk together the vinaigrette ingredients, seasoning with salt and pepper, to taste.

2. Using a sharp paring knife, cut the tops and bottoms off the oranges. Stand oranges up and slice to remove the peel and membrane. Then, slice oranges crosswise into thin wheels.

3. Add orange and fennel slices to the mixing bowl, along with the red onion. Drizzle lightly with the vinaigrette and taste. Drizzle more dressing and season with ground pepper as desired. Top with fennel fronds to serve.

Golden Beet Salad with Shaved Fennel

Tossed with a blood orange vinaigrette, this showpiece salad boasts beautiful color.

Ingredients

  • 1 bunch golden beets, cleaned and trimmed
  • 4 cups water
  • ½ cup red wine vinegar
  • ¼ cup sugar
  • Sea salt and fresh ground pepper
  • 3 blood oranges*
  • 2 tablespoons Champagne vinegar
  • 2 tablespoons olive oil
  • 2 baby fennel bulbs, trimmed and thinly shaved crosswise, fronds reserved
  • 4 cups loosely-packed butter lettuce greens
  • * If you can’t find blood oranges, you can substitute 2 Navel oranges.

Method

  1. Preheat oven to 350°. Place beets in a large roasting pan and pour over water, red wine vinegar, sugar and 3
    tablespoons salt. Cover with parchment and foil. Roast until just tender, they should be easily pierced with a
    knife, about 40 minutes.
  2. Peel beets under cool water. Cut into quarters. Juice two of the blood oranges in a small pot and reduce by
    half. Add reduction to a blender with one beet and champagne vinegar and blend until smooth. While motor is
    running add oil and season with salt and pepper. Strain into a medium bowl.
  3. Remove skin and sections from remaining orange. Toss the fennel, fronds, and greens in 2 tablespoons
    dressing. Plate dressed greens. Toss remaining beets and blood orange (peeled and cut into sections) in
    vinaigrette, season with more salt and pepper if necessary and arrange on top of greens.

Red Beet Salad with Cara Cara Orange Vinaigrette

This stunning salad is infused with bright, citrusy flavor.

Ingredients:
Roasted red beets, sliced and still warm from the oven (see recipe)
1½ cups microgreens, arugula or a combination of any mixed greens
¼ cup toasted nut of your choice, such as slivered almonds, pecans or hazelnuts

Vinaigrette:
1 shallot, peeled and minced
1 clove garlic, peeled and minced
2 teaspoons whole grain mustard
â…“ cup freshly squeezed juice from a Cara Cara orange
â…“ cup red wine vinegar
1 teaspoon honey
¾ cup olive oil
Sea salt salt and fresh ground pepper

Method:
1. To prepare the dressing: Put the shallot, garlic, and a pinch of salt in a food processor and pulse to turn into a paste. Add the mustard, vinegar, orange juice and honey, and process until smooth. If you have an opening in the top, add the oils slowly through it; if not, add tablespoons of oil in between pulsing. Taste the dressing and add any more salt if needed. You can also add a bit more honey if you like.

2. On a large serving platter, arrange the micro basil and top with the warm beet slices. Drizzle with the vinaigrette and gently toss to combine, tasting for seasoning and adding more salt and pepper if needed. Top with toasted nuts and serve.

Rosemary-Honey Marinated Oranges

Kissed with sweet honey and fragrant rosemary, these oranges are incredible served with ice cream for dessert!

Ingredients:
1 (20-ounce) jar with a lid
4-6 small-medium sized Cara Cara oranges
2 tablespoons honey
Sprigs of fresh rosemary, washed and dried
Juice from 1 small Cara Cara orange

Method:
1. Peel the oranges by slicing about ½-inch off of each end. Then, standing them on one of their flat bases, use a paring knife to carefully cut just between the pith and flesh, moving the knife downwards and following the curve of the orange. Remove any excess pith, then cut the oranges horizontally into thin (approximately ¼-inch) round slices. Set aside.

2. Gently remove the leaves from one or two of the rosemary sprigs and set aside.

3. Add a few slices of the oranges into the 20-ounce jar, drizzle with about ½-teaspoon of the honey and a few of the rosemary leaves. Repeat this process until you’ve reached the top of the jar. If you’ve reached the top and still have a few orange slices left, gently press down of those already in the jar. Add a few rosemary sprigs to the jar, along the sides, between the sides of the oranges and the glass. Lastly, pour in the juice, then close the jar tightly and let the oranges marinate for at least 24 hours, and up to 5 days, in the refrigerator.

Winter Citrus & Fava Shoot Salad

This crisp, citrus-kissed salad is both bold in flavor and beautiful in presentation.

Ingredients:
1 blood orange
1 Navel orange
½ pound fava shoots
½ red onion, thinly sliced
2 fennel bulbs, quartered, cored and thinly sliced, plus a handful of the fronds

Vinaigrette:
1 shallot, peeled and minced
â…“ cup freshly squeezed juice from an orange
â…“ cup red wine vinegar
1 teaspoon honey
¾ cup olive oil
Sea salt salt and fresh ground pepper

Method:

  1. Spread the salad greens out on a large, round serving platter to make a bed.
  2. Using a sharp paring knife, cut the tops and bottoms off the orange. Stand oranges up and slice to remove the peel and membrane. Then, slice oranges crosswise into thin wheels.
  3. Arrange the orange on top of the salad greens, overlapping the slices slightly. Then layer on the fennel slices. Scatter the onion slices on top of the salad.

Apple Galette with Candied Cranberries

This country-style tart is also topped with a drizzle of our housemade cranberry syrup.

Ingredients:
Farm & Larder galette dough, chilled
4 apples
½ cup candied cranberries
2 tablespoons sugar
½ teaspoon cinnamon
1 tablespoon unsalted butter, cut into small pieces
F&L cranberry syrup

Method:
1. Preheat the oven to 400°. Peel, halve and core the apples and slice into ¼-inch thick pieces. In a small bowl, combine the sugar and cinnamon.

2. On a lightly floured work surface, roll the pastry into a 12-by-14-inch rectangle and transfer to a large rimmed baking sheet. Decoratively arrange the apple slices over the pastry to within an inch of the edge. Drizzle the honey over apples, then sprinkle with cinnamon sugar and dot with the pieces of butter. Scatter the candied cranberries all over the apple mixture. Fold the pastry edge up and over the apples to create a 1-inch border.

3. Bake the galette for about 1 hour, until the pastry is nicely browned and crisp and the apples are tender. Transfer the pan to a rack and let the galette cool. Lightly drizzle with F&L cranberry syrup and serve warm.

Radicchio Salad with Cara Cara & Blood Oranges

This lovely salad from Ina Garten is sure to brighten up even the gloomiest gray day.

Ingredients:
1 cup (2-4) shallots, peeled and thinly sliced into rings, and separated
2 tablespoons apple cider vinegar
1/2 head each of Treviso and Rosalba radicchio, halved, cored and shredded like slaw
8 ounces baby arugula
2 Cara Cara oranges, peeled and sliced into thin half-rounds
2 blood oranges, peeled and sliced into thin half-rounds
â…” cup pitted Kalamata olives
½ cup freshly-squeezed lemon juice
½ teaspoon Dijon mustard
½ cup olive oil
Sea salt and fresh ground pepper

Method:
1. Place the shallots in a small shallow bowl and pour the vinegar over them. Set aside for 10 minutes to macerate.

2. In a large serving bowl, combine both radicchio, the arugula, both oranges and olives. Lift the shallots from the vinegar with a slotted spoon, sprinkle them on the salad, and toss lightly to combine (discard vinegar).

3. In a 1-cup glass measuring cup, whisk together the lemon juice, mustard, 1 teaspoon salt and ½ teaspoon pepper. While whisking, slowly add in the olive oil. Pour enough of the vinaigrette over the salad to moisten well. Sprinkle with an additional pinch of salt, toss well and serve.

Mixed Kale Salad with Cara Cara Orange Vinaigrette

Tossed with a sweet citrus dressing, this bright and fresh salad pairs beautifully with this week’s soup.

Ingredients:
8 cups mixed Lacinato and curly kale greens, removed from thick stems, washed and patted dry
1 cup slivered almonds
2 small Cara Cara oranges, juiced
Zest from both oranges
2 tablespoons balsamic vinegar
2 tablespoons honey
1 clove garlic, peeled and minced
¾ cup olive oil
Sea salt and fresh ground pepper

Method:
1. In a small skillet, toast almonds until golden brown and fragrant. Set aside to cool.

2. In a blender, combine the orange zest, orange juice, balsamic vinegar, honey, garlic, salt, and pepper. Blend until smooth. With the blender running, add the olive oil in a steady stream until combined.

3. Working in batches, cut the kale into thin ribbons and place in a large bowl. Sprinkle with the almonds and toss with about half of the dressing. Season to taste with additional salt and pepper and vinaigrette, as desired.
