Boiled Leeks with Vinaigrette

This classic French dish dresses up fresh leeks with a tangy Dijon mustard-based vinaigrette.

Ingredients:
6 medium leeks, trimmed
2 tablespoons white wine vinegar
1 tablespoon Dijon mustard
1 tablespoon water
1/2 cup extra-virgin olive oil
Sea salt and fresh ground pepper
Fresh flat-leaf parsley and tarragon leaves, chopped

Method:
1. Bring a large pot of water to a boil over high heat, then salt it generously. Trim the root end of the leeks, leaving enough to hold the leaves together, and halve lengthwise. Rinse very well under running water to flush out any grit trapped between the leaves.

2. Add the leeks to the boiling water and cook until tender, 7 to 10 minutes. Transfer the leeks to a paper towel-lined plate to drain. Pat dry and lay on a serving platter.

3. Meanwhile, whisk the vinegar, mustard, water, and about ¾ teaspoon salt in a small bowl. Gradually whisk in the olive oil, starting with a few drops and then adding the rest in a steady stream to make a smooth, slightly thick dressing.

4. Drizzle the vinaigrette evenly over leeks, turn them to coat, and scatter the parsley and the tarragon, if using, over the top. Serve immediately or up to 2 hours later at room temperature.

Tagliatelle Pasta with Grana Fonduta & Broccoli Rabe

The sauce for this delectable creamy pasta is crafted from duck egg yolks, Grana-style cheese and crème fraîche.

Ingredients:
2 large duck egg yolks
1½ cups crème fraîche
5 ounces Grana-style cheese, finely grated, plus a bit more for finishing
1 medium garlic clove, finely grated on a rasp-style grater
1 bunch broccoli rabe, trimmed of tough ends and separated into florets
1 pound tagliatelle pasta, or other favorite pasta noodle
Sea salt and fresh ground pepper

Method:
1. Bring a large pot of well-salted water to a boil. Meanwhile, bring an inch or two of water to a boil in a small pot. Whisk together the egg yolks, crème fraîche, Grana and garlic in a heatproof bowl that will fit snugly inside the pot without making contact with the boiling water.

2. Set the bowl in the small pot and whisk the egg mixture constantly, occasionally scraping the sides and removing the bowl from the pot every couple of minutes as you whisk to keep the cooking nice and slow (don’t let it boil). Cook just until the sauce has thickened slightly (it should thinly coat the back of a spoon), 6 to 8 minutes. Set the bowl aside in a warm place.

3. Add the noodles to the boiling salted water and cook until al dente, dropping in the broccoli rabe during the last 2 minutes of cooking. Drain the pasta and broccoli, then return to the pot, tossing to coat with most of the fonduta sauce. Season to taste with salt and pepper and add more fonduta as desired. Serve with additional freshly-grated Grana-style cheese.

Roasted Walla Walla Onions with Pine Nut Butter

This classic side dish from Tom Douglas’ Dahlia Lounge restaurant is often served over a bed of sautéed Swiss chard.

Ingredients:
4 medium Walla Walla sweet onions
1 tablespoon olive oil
½ cup pine nuts, toasted
3 ounces unsalted butter, softened
½ teaspoon lemon zest
½ teaspoon chopped fresh rosemary
¼ teaspoon freshly ground black pepper
¼ teaspoon salt, or to taste
â…“ cup freshly grated Parmesan cheese
Additional pine nuts, lemon wedges and rosemary sprigs for garnish

Method:
1. Preheat oven to 375°. Peel onions and cut them in half, top to bottom. Brush onions with oil and place cut side down on a preheated grill or grill pan. Barbecue until grill marks form. Place on a cookie sheet and finish cooking in the oven until tender, about 25 minutes.

2. Meanwhile, make the pine nut butter. Place the ½ cup pine nuts in the bowl of a food processor and pulse several times until finely ground. Add butter, lemon zest, rosemary, black pepper and salt. Process until mixture is well blended. Spread the tender onions liberally with pine nut butter. Return to the oven to cook just until butter is melted, about 2 minutes.

3. Serve onions warm, sprinkled with grated Parmesan cheese and additional toasted pine nuts. Garnish plates with lemon wedges and rosemary sprigs if desired.

Baby Lettuce Greens with Chive Blossom Vinaigrette

Whisked with honey and olive oil, this truly unique vinaigrette adds a light, crisp finish to a salad of baby greens.

Ingredients:
Baby lettuce greens, like Tom Thumb
Green apple, chopped
Bleu cheese crumbles

Vinaigrette:
¼ cup chive blossom vinegar
1 teaspoon honey½ – ¾ cup extra virgin olive oil
Fresh ground pepper

Method:
1. To make vinaigrette, mix chive blossom vinegar with honey in a bowl. Whisk in olive oil and combine until smooth.

2. In a large mixing bowl, toss baby lettuce greens with chopped apples, bleu cheese and vinaigrette to taste. Top with additional ground pepper if needed.

Herb-Roasted Fingerling Potatoes

An easy and delicious way to prepare these tiny, buttery potatoes!

Ingredients:
1 pound fingerling potatoes
1-2 tablespoons olive oil
1-2 tablespoons of finely chopped fresh sage, rosemary or sage
Sea salt and fresh ground pepper

Method:
1. Preheat the oven to 425°.

2. Pull leaves of the stems of your chosen herb. (If using sage, give the leaves a quick chop.)

3. Wash and pat dry potatoes. Place in a mixing bowl and drizzle with olive oil, the toss to fully coat. Sprinkle generously with sea salt. Roast the potatoes, shaking the pan occasionally, until they are tender and browned, approximately 35 to 45 minutes or until tender.

4. Leave whole or cut in half. Sprinkle fresh herbs over the potatoes and toss to coat.

Roasted Cauliflower with Garlic

Minced garlic and fresh parsley add bright flavor to roasted cauliflower florets.

Ingredients:
1 large head cauliflower, separated into florets
4 tablespoons minced garlic
3 tablespoons olive oil
1 tablespoon fresh parsley, chopped
Sea salt and fresh ground pepper

Method:
1. Preheat the oven to 450°. Grease a large casserole dish.

2. Place the olive oil and garlic in a large resealable bag. Add cauliflower, and shake to mix. Pour into the prepared casserole dish, and season with salt and pepper to taste.

3. Bake for 25 minutes until florets begin to brown in spots, stirring halfway through. Remove from oven and garnish with fresh parsley.

Steamed Tokyo Turnips

Finished with your choice of toppings, steamed turnips make for a simple, delicate side.

Ingredients:
2 bunches Tokyo turnips, with greens
Sea salt, lemon juice, olive oil, soy sauce or vinegar for serving

Method:
1. Separate turnips and greens. Rinse turnips and wash greens. Remove any yellow or damaged leaves and discard. Quarter both turnips and greens.
2. Place a steamer basket in a saucepan with a tight-fitting lid; add enough water so that it reaches a depth of about ½ inch. Bring water to a boil over high heat. Add turnips and greens to steamer basket, cover, and cook until tender, 5 to 8 minutes. Serve with desired toppings.

Roasted Savoy Cabbage with Raisins

Juicy golden raisins add sweet appeal to this roasted dish.

Ingredients:
2 tablespoons golden raisins
1 large head Savoy cabbage, quartered and cored
2 ½ tablespoons peanut oil
3 tablespoons butter
2 fresh thyme sprigs
Sea salt and fresh ground pepper

Method:
1. Put oven rack in middle position and preheat oven to 400°. Soak raisins in very hot water to cover in a small bowl 30 minutes, replacing hot water once or twice as it becomes tepid. Tear cabbage into large pieces.

2. Heat oil in a 12-inch heavy ovenproof skillet or pot over moderately high heat until hot but not smoking, then add cabbage in 5 batches, adding some salt and pepper with each batch, stirring, and adding next batch as previous batch begins to wilt. (Some cabbage will brown.)

3. Add butter and thyme and cook, stirring frequently, until all cabbage is wilted, about 3 minutes. Drain raisins and add to cabbage, then transfer skillet to oven and roast, stirring every 10 minutes, until cabbage is tender, 30 to 40 minutes. Discard thyme sprigs before serving.

Broccoli Rabe with Oil & Garlic

Tender-crisp with loads of texture, this dish gets extra spice courtesy of crushed red pepper and garlic.

Ingredients:
1 pound broccoli rabe
3 tablespoons extra-virgin olive oil
2 garlic cloves, peeled and sliced
¼ teaspoon crushed red pepper, or to taste
¼ cup water, or as needed
Sea salt

Method:
1. Trim broccoli rabe. Wash the trimmed broccoli rabe in a sinkful of cold water, swishing the stems gently to remove all dirt from between the leaves. Let the leaves sit a minute or two undisturbed to allow the dirt to settle to the bottom of the sink, then lift the broccoli rabe from the water with your hands or a large skimmer. Drain in a colander.

2. Heat the olive oil in a large skillet over medium heat. Scatter the garlic over the oil and cook, shaking the pan, until golden brown, about 1 minute. Carefully lay the broccoli rabe into the oil, season lightly with salt and ¼ teaspoon crushed red pepper. Stir and toss to distribute the seasonings.

3. Pour ¼ cup water into the skillet and bring to a boil. Cover the skillet tightly and cook, lifting the lid to turn the stalks occasionally, until the broccoli rabe is tender. Taste and season with additional salt and crushed red pepper if necessary. Serve hot.

Roasted King Trumpet Mushrooms

Thick, meaty slices of this mushroom variety are roasted in the oven for a rich, concentrated flavor.

Ingredients:
1 ½ pounds King Trumpet mushrooms, thickly sliced
4 tablespoons butter, sliced
½ cup chicken stock
¼ cup olive oil
2 tablespoons parsley chopped
Sea salt and fresh ground pepper

Method:
1. Preheat the oven to 425°. Arrange the mushroom slices on a large rimmed baking sheet in a slightly overlapping layer. Dot the mushrooms with the butter and drizzle with the chicken stock and olive oil. Season with salt and pepper.

2. Roast the mushrooms in the center of the oven for about 50 minutes, turning occasionally, until the stock has evaporated and the mushrooms are tender and lightly browned in spots. Blot with paper towels and transfer to a plate. Sprinkle with the parsley and serve.
