The briny journey continues! In this second chapter of our three-part Oysterology series, the team from The Pop-Up Oyster Bar Co. returns to guide a deeper exploration of Pacific Northwest oysters—this time with more fire, more flavor, and a little more play built in.

You will learn how to build your own oyster shooters, mixing and matching an array of toppings and spirits to create bold, perfectly balanced bites. The tasting includes 12–18 oysters representing four different Pacific Northwest species, prepared both raw and grilled as we fire up the OFYR grill to explore the art of cooking these local beauties.

The experience finishes with baked oysters from our wood-fired oven and a seafood-inspired lunch featuring pan-fried oyster sliders and a generous spread of seasonally inspired sides, made with ingredients sourced from the garden and creamery at Bella Luna Farms. Equal parts technique, tasting, and good fun, this class is all about discovering just how far a great oyster can take you.

At each Bella Luna class you will get the chance to enjoy Bellsong Creamery cheeses, sip a glass of something special, and gather around a beautifully prepared meal.
