In this hands-on class, we’ll dive into the world of buckwheat—the cornerstone of Brittany’s beloved galettes—as Emma shares the secrets of mixing traditional batters, mastering the perfect spread and turn, and creating both savory and sweet variations. Together, we’ll make classics like la complète with egg, ham, and Bellsong Creamery’s Bella Rossa cheese, a mushroom and crème fraîche galette, and a fromage blanc with honey variation. To finish, Emma will guide you through two irresistible sweets: farm apples sizzled in salted butter caramel and the showstopping crêpe suzette. Along the way, you’ll also sample traditional French ciders from Brittany, offering the perfect pairing to these authentic dishes.

 

At each Class on the Farm you will get the chance to enjoy Bellsong Creamery cheeses, sip a glass of something special, and gather around a beautifully prepared meal.

Emma Le Dû

Emma Le Dû grew up in Brittany, France, where crêpes and galettes are an essential part of daily life—half the restaurants are creperies, and every Friday at home is dedicated to making crêpes. These classic dishes, passed down through generations, embody the authenticity and
excellence of her Celtic homeland. Now living in the Pacific Northwest, Emma is the founder of Crêpes & Travel, a culinary venture that invites guests to experience the traditions of Brittany firsthand. She teaches crêpe and galette classes and leads small-group tours to Brittany, sharing the region’s unique culture, stories, and flavors. When not in the kitchen or guiding tours, Emma spends her time empowering teachers in Latin America through the nonprofit TINFA.
