Stirring Up Autumn

As the fall evenings grow cooler, we’re embracing the comforting flavors of northern Italy with a box made for gathering around the table. Arborio rice and slow-simmered chicken stock set the stage for a beautifully creamy risotto, ready to be dressed up with earthy foraged mushrooms, savory Italian sausage, or crisp, golden guanciale. Finish with a generous grating of our own Bella Rossa cheese, a handful of fragrant garden herbs, and you’ve got the makings of a truly memorable meal. Crusty Pain au Levain, crisp seasonal greens, colorful fall vegetables, farm-fresh eggs, and apples straight from the Bella Luna orchard round out this week’s collection of cozy comforts.

Here’s what you’ll find in your box this week:

Arborio Rice
This round-grain rice comes from the Po River Valley region of Italy and is named for the town of Arborio located in the heart of the area. When cooked with our flavorful chicken stock and a splash of white wine, it becomes creamy and starchy and is a great pairing for autumn produce, such as this week’s foraged mushrooms.

Skagit River Ranch Italian Sausage
Raised on certified-organic pastures in Sedro-Woolley, Skagit River Ranch’s happy pigs roam, root, and thrive on a diet of flaxseed, corn, and wheat. Seasoned with savory Italian herbs, this flavorful sausage is a delicious addition to this week’s risotto.

Smoking Goose Guanciale
Rich, savory, and wonderfully indulgent, this Italian-style cured pork jowl from Smoking Goose is seasoned with garlic, juniper berries, black peppercorns, bay leaves, nutmeg, and red wine. Guanciale crisps beautifully in a hot pan, releasing flavorful fat that adds incredible depth to everything it touches; dice and sauté until golden, then fold into this week’s risotto for a deliciously decadent finish.

Pain au Levain Bread
This slightly-nutty, slightly-sweet sourdough baguette epitomizes French country-style baking with a chewy crust and light, airy interior. Baked by our favorite bakery in Snohomish, this traditional Pain au Levain is crafted using the bakery’s own sourdough starter.

Momento Cellars 2021 Relic Red
A Bordeaux-style blend from Washington’s Momento Cellars, Relic Red is a natural companion to the rich, comforting flavors of autumn. Full-bodied and food-friendly, it’s a lovely match for this week’s wild mushroom risotto, savory Italian sausage, and earthy roasted vegetables. Pour a glass, settle in, and savor a cozy October evening around the table.

Farm Fresh Eggs
Our small flock of heritage-breed Black Copper Maran, Ameraucana, and Delaware hens provides us with fresh eggs in beautiful shades of brown and green. As October brings cooler days and the first signs of autumn to the farm, the hens still spend plenty of time outdoors, happily pecking, scratching, and foraging in the fresh fall air.

Bellsong Creamery Bella Rossa Cheese & Fresh Buttermilk
Handcrafted here in our farmstead creamery using the freshest raw cow’s milk from the Skykomish Valley, Bella Rossa is a raclette-style washed-rind cheese inspired by the great alpine cheeses of France and Italy. Aged and carefully washed in our creamery cave for several months, it develops a beautiful pinkish-copper rind and a rich, creamy texture with savory, brothy notes. Also included from our creamery: Beautifully-thick, tangy and creamy buttermilk.

Farm & Larder Chicken Stock
Made from roasted organic chickens, this flavorful stock is simmered slowly for hours with carrots, onions and celery and seasoned with a dash of sea salt.

Seasonal Organic Greens
Mixed late fall radicchio and baby lettuce greens.

Foraged Fall Mushrooms
A delicious taste of the season, these locally foraged mushrooms bring rich, earthy flavor to the autumn table. Sauté with butter, garlic, and fresh herbs for a simple side, fold into creamy risotto for a comforting fall meal, or pile atop toasted bread with a sprinkle of Parmesan for an easy appetizer.

Fresh Organic Fruits & Vegetables
This week’s selection of produce also includes sweet yellow onions, Pinto potatoes, red-cored Chantenay carrots, Gatherer’s Gold sweet peppers, purple sprouting broccoli, and mixed orchard apples from the Bella Luna trees.

Garden-Grown Herbs
Garlic, shallots, Italian flat-leaf parsley, rosemary, thyme, and sage from the walled garden and middle field here at Bella Luna.
