What’s In The Box? June 7-13

Spring Picnic
The pleasant days of early June practically beg for a lazy, leisurely picnic packed with farm-fresh produce such as sun-ripened cherry tomatoes and favorite bites like baby red potato salad topped with silky dressing. This week, spend an afternoon with family and friends nibbling away at a picnic-perfect quartet—smoked salmon, velvety crème fraîche, pickled red onions and Jewish Rye bread. Also included in this bright lineup: A bevy of bright salad greens and all the ingredients for a delicious fresh apricot galette.

Here’s what you’ll find in your box this week:

Smoked Wild Salmon

Tender and perfectly flaky, this top-quality, reef net-caught salmon is hot smoked over alder coals and kissed with just the right amount of seasoning. Extra-rich and flavorful, it is excellent paired with pickled red onions, lemony crème fraîche and this week’s Jewish Rye loaf.

Pickled Red Onions

A wonderful condiment for burgers, lox and even tacos, our handcrafted red onions are pickled in vinegar and seasoned with fresh garden herbs.

Jewish Rye Bread

This dense, nutty loaf is baked for us by our favorite small bakery in Snohomish. Crafted with traditional dark rye flour, a natural sour rye starter and caraway seeds, this hearty bread is wonderful toasted and topped with lox.

La Vieille Ferme Blanc 2016

This French white wine is a lovely dinner wine, pairing well with salads and light entrées such as chicken or fish. The nose shows enchanting aromas of white fruits, citrus and spring flowers and, on tasting, the palate is fresh and aromatic, with a rich and inviting undertone.

Crème Fraîche

Crafted in our farmstead creamery from pasteurized organic sweet cream, our rich and silky crème fraîche serves as a beautiful base for summer salad dressings—see recipes for ideas!

Farm Fresh Eggs

Busy scratching through the straw mulch in their spacious outdoor run looking for tasty bugs and worms on nice days, our heritage breed laying hens are also thoroughly enjoying a bounty of sprouting seeds and spring popweed, in turn supplying us with fresh eggs in beautiful shades of blues, green and brown.

Galette Dough

Crafted from all-purpose flour, sugar and organic butter, this housemade pastry dough adapted from a beloved Alice Waters recipe bakes up light and crisp, with a smooth buttery taste that pairs well with this week’s amazingly-juicy fresh apricots.

Fresh Fruit

Lemons and fresh apricots.

Seasonal Organic Greens

Mixed baby lettuces, peppery arugula and mesclun salad greens.

Seasonal Organic Vegetables

This week’s produce selection also includes baby red potatoes, Hedlin Farms cherry tomatoes, red radishes, Hakurei turnips and Walla Walla spring onions.

Fresh Garden Herbs

Enjoy a bountiful selection of fragrant herbs this week: Mint, parsley, garlic, thyme, rosemary and dill.
