Cozy Comforts
Along with busy days and festive nights, December has brought with it a continuation of November’s wet and windy weather. Accordingly, this week’s lineup invites you to sit down to a cozy, comfy supper after a damp day with risotto crafted with earthy Chanterelle mushrooms, herb-kissed fromage blanc and a truffle, sea salt and Parmesan blend topping, plus soft, chewy focaccia bread and a beautiful Washington red wine. Also accompanied by Lollipop radishes, Chioggia radicchio, leeks, Brussels sprouts and beautiful garden-grown herbs, this box will do wonders to ward off any rainy day blues (as will a glass of heirloom blueberry juice!).

Here’s what you’ll find in your box this week:

Arborio Rice

This round-grain rice comes from the Po River Valley region of Italy and is named for the town of Arborio located in the heart of the area. When cooked with our flavorful chicken stock and a splash of white wine, it becomes creamy and starchy and is a great accompaniment to just about any flavor combination, like this week’s Chanterelle mushrooms.

Chanterelle Mushrooms

With a firm texture and light, delicate flavor, locally foraged golden Chanterelle mushrooms lend earthy appeal to a variety of fall dishes like pasta, soup and of course, risotto!

Ritrovo Truffle, Salt & Cheese Blend

This beautiful mix of sea salt, grated Parmesan cheese and earthy black truffles is sure to be a new favorite; be sure to try it sprinkled on top of a warm bowl of mushroom risotto.

Farm & Larder Chicken Stock

Made from roasted Bella Luna chickens, this flavorful stock is simmered slowly for hours with carrots, onions and celery and seasoned with a dash of sea salt.

Focaccia Bread

This soft, chewy Italian-style loaf is baked just for us by our favorite local bakery. Kissed with fragrant fresh herbs, it is delicious served warm and dipped in olive oil.

Saviah Cellars ‘The Jack’ Red Wine 2020

Crafted from a combination of fruit grown in the Walla Walla Valley and Columbia Valley AVAs, “The Jack” opens with enticing aromas of black cherries, plum, blackberries, sweet herb, vanilla and spice. The flavors showcase bright, perfectly ripe red and black fruit that lead to a long silky, smooth finish.

Farm Fresh Eggs

Our small flock of heritage breed laying hens are on an early-to-bed, later-to-rise schedule with the shorter daylight hours. As they spend more time snug in their coop, the “girls” are enjoying an extra helping of grain to supplement their diet, continuing to give us fresh eggs in beautiful shades of brown, beige and cream.

Cherry Valley Fromage Blanc with Fines Herbes

This wonderful cheese is made from locally-sourced milk and farm-fresh herbs by Cherry Valley Dairy in Duvall. A creamy and just slightly tangy cheese, it can be used in place of ricotta or mascarpone in recipes. This week, we heartily recommend adding it into your risotto!

Bow Hill Organic Heirloom Blueberry Juice

Made from a cold-pressed blend of Rubel and Jersey blueberries harvested from heirloom bushes, this truly unique drink hails from the esteemed Bow Hill blueberry farm in Bow, Washington.
