What’s In The Box? May 23-29

Spring Color
This week’s lineup is truly color-rich, from ruby-red rhubarb and bright green asparagus to beautiful lemons, French Breakfast radishes and a plethora of spring greens and pungent herbs. Accompanying this bright roster are all the ingredients you need to finish off a spring feast: wild mushroom duxelles, chicken stock and Arborio rice for risotto, plus multigrain bread, herbed fromage blanc and our own F&L rhubarb cake mix.

Here’s what you’ll find in your box this week:

Arborio Rice

When cooked with chicken stock and a splash of wine, this traditional round-grain rice becomes creamy and starchy and is a great accompaniment to just about any flavor combination—including this week’s duxelles. We recommend serving this hearty, Italian-inspired entrée with a helping of grilled asparagus that has been topped with a light, lemony vinaigrette; see recipes for details.

Housemade Duxelles

An excellent complement to this week’s risotto, our housemade duxelles are made from a finely chopped mixture of wild mushrooms, shallots and herbs sautéed in butter and wine.

Housemade Chicken Stock

Made from roasted Bella Luna chickens, our housemade stock is simmered with carrots, onions, parsley and celery and seasoned with just a dash of sea salt.

Multigrain Bread

From our favorite bakery in Snohomish, this freshly-baked loaf is made with locally-milled Shepherd’s Grain flour, honey and seven different whole grains, all topped with toasted sunflower seeds.

Caves De Cerca Fâmega Vinho Verde

This young, Portuguese wine features a delicate mineral and fruity aroma, made from a blend of 50-percent Arinto, 30-percent Loureiro and 20-percent Trajadura grapes. Balanced and quite versatile wine, it that can be enjoyed as an aperitif or to accompany this week’s risotto main.

Farm Fresh Eggs

Busy scratching through the straw mulch in their spacious outdoor run looking for tasty bugs and worms on nice days, our heritage breed laying hens are also thoroughly enjoying a bounty of sprouting seeds and spring popweed, in turn supplying us with fresh eggs in beautiful shades of blues, green and brown.

Housemade Herbed Fromage Blanc

This wonderful cheese is made in our in-house creamery from locally-sourced milk and farm-fresh herbs. A creamy and just slightly tangy cheese, it can be used in place of ricotta or mascarpone in recipes. Add a dollop this week’s risotto for a rich, decadent finish.

Dick Taylor Candied Almond Dark Chocolate Bar

Crafted ‘bean-to-bar’ in their small, Northern California factory, this gorgeous chocolate bar from Dick Taylor is made from California almonds candied with sugar and cinnamon, plus organic cacao and cane sugar.

F&L Rhubarb Cake Mix

Crafted from our own signature recipe, this cake mix bakes up moist and delicious when simply mixed with eggs, walnuts and spring rhubarb—see recipes for details!
