Happy New Year! Get 2016 off to a fresh start with this week’s lineup, featuring a comforting wild mushroom risotto simmered in our housemade Porcini mushroom chicken stock, nutty whole-grain bread and fresh, seasonal vegetables including Acorn squash, Yellow Ball turnips and Chantenay carrots. Coupled with a robust Argentinian Malbec, Westward blue cheese and farm-fresh eggs from our flock of heritage breed hens, this beautiful winter menu is both richly flavorful and resolution friendly.

Here’s what you’ll find in your box this week:

Arborio Rice

This traditional round-grain rice comes from the Po River Valley region of Italy and is named for the town of Arborio located in the heart of the region. Creamy and comforting, it is a great accompaniment to just about any flavor combination, especially simmered in this week’s Porcini mushroom chicken stock and topped with locally-foraged wild mushrooms—see recipes for details.

Porcini Mushroom Chicken Stock

Made from roasted Bella Luna chickens, this flavorful stock is infused with the flavors of earthy Porcini mushrooms and white wine, then simmered slowly with fresh herbs and aromatic vegetables, and seasoned with a dash of sea salt and black pepper.

Dried Wild Mushrooms

These beautiful fungi have been foraged from the mossy forests of the Pacific Northwest by expert mushroom hunter Jeremy Faber of Foraged & Found Edibles—see this week’s recipes for instructions on how to reconstitute these local delicacies to add to your risotto.

Whole-Grain Bread

Crafted in nearby Snohomish by our favorite bakery, this fresh round loaf is made with locally-milled Shepherd’s Grain flour, seven different whole grains and a hint of honey, plus topped with toasted sunflower seeds.

Luigi Bosca Finca la Linda Malbec

This elegant wine from Argentina is fit for a cold winter’s night with a round, smooth texture and long, lingering finish. Wonderful served alongside this week’s risotto, it is crafted from the robust Malbec grapes grown on the winery’s heritage vines in Finca la Linda.

Farm Fresh Eggs

As they spend more time snug in their coop during the cold, blustery winter months, our heritage breed laying hens are enjoying an extra helping of grain to supplement their diet, in turn supplying us with eggs in beautiful shades of brown, blue and green.

Westward Blue Cheese

This gorgeous soft marbled cheese boasts big, bold flavor, adding bite to salads, roasted vegetables and appetizers like crostini.

Seasonal Organic Fruits & Vegetables
