This incredibly-simple method produces tender, flavorful wedges fit for serving alongside your favorite protein.

2 large heads of radicchio (about 1 pound total), halved through core end, each half cut into large wedges
3 tablespoons olive oil
1 tablespoon chopped fresh thyme
Balsamic vinegar (for drizzling)

Method:
1. Preheat oven to 450°. Rinse radicchio wedges in cold water; gently shake off excess water (do not dry completely). Place radicchio in large bowl. Drizzle with olive oil and sprinkle with thyme, salt, and pepper; toss to coat.

2. Arrange radicchio wedges, cut side up, on rimmed baking sheet. Roast until wilted, about 12 minutes. Turn over and roast until tender, about 8 minutes longer.

3. Arrange radicchio on platter, drizzle with balsamic vinegar, and serve.

2 carrots, peeled and chopped into 1-inch pieces
4-6 baby red beets, peeled and chopped into 1-inch pieces

2 tablespoons wholegrain mustard
2 tablespoons chili soy sauce
1 clove garlic, peeled and minced
Sea salt and fresh ground pepper

1. On a large sheet pan, combine all the chopped vegetables except the mushrooms, then combine with the olive oil, balsamic vinegar, mustard chili soy sauce and garlic.

2. Season liberally with salt and pepper, then bake in a 400º oven for about 20 minutes until the vegetables are just barely tender. Add the baby Shiitake mushrooms and continue to roast another 10 minutes, until all the vegetables are fully render. Remove from the oven, arrange on a platter and serve warm or at room temperature.

Balsamic Roasted Warm Beet Salad

This Barefoot Contessa recipe is not only incredibly beautiful but also extremely flavorful.

Ingredients:
Roasted beets, sliced and still warm from the oven (see recipe)
½ cup balsamic vinegar
½ cup high-quality olive oil
2 teaspoons Dijon mustard
4 ounces arugula greens
1/3 cup salted Marcona almonds or regular almonds, toasted
4 ounces soft goat cheese, crumbled

Method:
1. To prepare the dressing, whisk together the vinegar, olive oil and mustard with 2 teaspoons salt and 1 teaspoon pepper and set aside.

2. While the beets are still warm, place them in a large mixing bowl and toss them with half of the vinaigrette (warm beets absorb more vinaigrette). Taste for seasoning and add more salt and pepper if needed.

3. Place the arugula in a separate bowl and toss it with enough vinaigrette to moisten. Put the arugula on a serving platter and then arrange the beets, almonds, and goat cheese on top. Drizzle with additional vinaigrette, if desired, sprinkle with salt and pepper, and serve warm or at room temperature.
