The Italian Spring
This week’s lineup combines a bevy of fresh spring produce—from verdant greens to vibrant red radishes—with the soulful flavors of Italy, also including smoky, nitrate-free bacon, fresh bucatini pasta, and silky duck eggs that are all begging to star in pasta carbonara for supper (see the enclosed recipe suggestions for that one!). Also including fun Italian-style pantry provisions such as pillowy focaccia bread, farmstead Caciotta cheese and soft amaretti cookies with chocolate, as well as spring daffodils, this box will transport you abroad, all without leaving your very own kitchen. Here’s what you’ll find in your box this week:

Fresh Bellingham Pasta Co. Bucatini

Hand-crafted in nearby Bellingham, this spaghetti-like semolina pasta has a hole running through the center—hence the name bucatini, which comes from the Italian buco, meaning “hole”, while bucato means “pierced”.

Skagit River Ranch Bacon

The perfect compliment to this week’s pasta, this smoky, locally-sourced bacon is also nitrate-free. The pampered pigs raised on the Skagit River Ranch in Sedro Woolley roam outdoors in certified-organic pastures to root, dig, and cavort as only happy pigs can, thriving on a diet of flax seed, corn and wheat.

Focaccia Bread

This soft, chewy Italian-style loaf is baked just for us by our favorite local bakery. Kissed with fragrant fresh herbs, it is delicious served warm and dipped in olive oil.

Château de Campuget Costières de Nîmes 2021

This lovely white Rhône wine features a well-balanced structure, beginning with a round and fruity taste of peach and apricot, and ending on a fresh and persistent note of citrus fruits.

Ferndale Farmstead Caciotta Cheese

Crafted by the cheesemakers at this family-owned and -operated farm in Ferndale, this traditional Italian table cheese boasts a mild yet irresistible flavor with a soft texture. Aged in small wheels for a short time to produce a natural yellow rind, this cheese is tasty and versatile, and makes for a great addition to a cheese board.

Farm Fresh Eggs

Our small flock of heritage breed laying hens give us fresh eggs in beautiful shades of brown, beige and cream.

Duck Eggs

With near-transparent egg whites and color-rich oversize yolks, these local duck eggs are a chef’s dream, lending flavorful appeal to a variety of dishes.
