Fall Salad with Roasted Squash, Apples & Candied Squash Seeds

Topped with a maple-mustard vinaigrette and candied squash seeds, this salad would pair nicely alongside this week’s antipasti bites.

Ingredients:
8 cups fall salad mix, or a mix of your favorite greens
1 apple, cut into large matchsticks
1½ cups cubed and roasted winter squash of your choice, such as Robin’s Koginut
¼ cup thinly-sliced red onion
⅓ cup crumbled feta cheese
½ cup candied squash seeds (see recipe)

Dressing:
¼ cup olive oil
2 tablespoons balsamic vinegar
1 tablespoon fresh lemon juice
1 teaspoon maple syrup
1 teaspoon Dijon mustard
Sea salt and fresh ground pepper

Method:
1. Whisk all the dressing ingredients in a small bowl until combined. Season with salt and pepper to taste.

2. In a large bowl, toss the greens with half of the vinaigrette. Arrange the apple slices, squash, red onions, feta, and candied seeds on top of the greens. Drizzle with the remaining vinaigrette and serve.

We’ll say one thing for our cooler-than-usual spring: It has produced a beautiful bevy of tender greens in the garden! This week, greet summer with the best of spring’s bounty⁠—from Lacinato kale and pea shoots to baby lettuces and arugula⁠—as well as enjoy the return of some seasonal favorites now that the temps are (finally!) beginning to rise, such as locally-grown strawberries, fresh fava beans and edible flowers. Accentuated by pasta, Lummi Island wild tuna, Pain au Levain bread, sheep’s milk feta, and farm-fresh eggs and herbs, this week’s lineup is looking as bright as the upcoming weekend forecast; to summer!

In the tradition of our own Nonna Pat’s long-standing Sunday suppers, this week’s box includes fixings for a truly satisfying Italian-style spread: Appetizer provisions like freshly-baked focaccia and plump olives; fresh bucatini pasta topped with Nonna’s signature marinara sauce and Grana-style cheese; and finally, our signature lemon olive oil-polenta cake mix to whip up for dessert. Brown Butter Kale

This Tom Douglas recipe combines quality ingredients to bring out the inherently nutty flavor of this protein-rich green.

Ingredients:
2½ pounds Lacinato kale (1 large bunch)
8 tablespoons (1 stick) unsalted butter
Sea salt and fresh ground pepper
Lemon wedges

Method:
1. Stem and wash the kale, shaking off excess water. In a large pot of boiling, salted water, cook the kale until tender, about 5-10 minutes. Drain the kale in a large colander, then let cold water run over until cool enough to handle. With your hands, squeeze most of the water out. Roughly chop the kale.

2. Melt butter in a very large sauté pan over medium-high heat. Allow the butter to bubble and turn golden brown (it will have a toasted fragrance). Watch carefully, this only takes a few minutes.

3. Add the kale to the pan and stir until mixed with butter and warmed through. Season to taste with salt and pepper, remove from heat. Pile on a platter and garnish with lemon wedges to squeeze over.
